Eunice Kathleen Waymon was born on February 21, 1933 in
Tryon, North Carolina, USA., the sixth of eight children,
four boys and four girls. Early on in life she revealed a
prodigious musical talent playing the piano and singing in
the local church with her sisters in their mother's choir.
At the age of six, in 1939, a benefactor paid for her first
piano lessons.
Eunice made so much progress that in 1943, when she was
10, she gave her first piano recital at the town library.
There she not only experienced her first applause, but also
had her first encounter with racism: during the recital her
parents were removed from the first row to accommodate some

This is how I understood it:
Sinnerman is trying to hide from himself, he is trying to avoid the truth. But he cannot hide, since the rock won't help him, the river can't help him, the sea cannot help him. Even the Lord tells him to go the devil, who has been waiting all day. The Lord cannot help the sinnerman, unless the sinnerman admits his actions. This is clearly expressed here:

Sinnerman might be praying, but only to save himself, his prayer was not sincere.
Sinnerman can run forever, but cannot be free until he stops to lying to himself.
I wasn't sure what I was about to hear. At this point in time in my life, there has been so much sorrow and hurt. After listening to Nina, it really didn't matter how much pain there was, I just really want my loved ones, people that have encouraged me, or just simply influenced my life, I wish they could knew how they have influenced me. If they knew just how much I have grown.

The song is based on a prophesy recorded shortly after Jesus' death and resurrection, which gives the the most detailed picture of his promise of judgment on the earth (amongst other prophesies). The prophesy is titled as the book "Revelation" in the bible and is the last "book". Here's a couple of verses from it (chapter 6, verses 15-17) that relate to image of people seeking refuge in the rocks:
Then the kings of the earth and the great men and the commanders and the rich and the strong and every slave and free man hid themselves in the caves and among the rocks of the mountains; and they said to the mountains and to the rocks, "Fall on us and hide us from the presence of Him who sits on the throne, and from the wrath of the Lamb (Jesus), for the great day of their wrath has come, and who is able to stand?"
The image of the sea with blood in it is also found in Revelation. If you know the story of the plagues that God delivered to Egypt (found in the book Exodus) you might remember the Nile filling with blood, its a repeated symbol of judgment. Revelation makes no mention of the sea boiling but there are other events that happen to it.
Bernado has grasped the meaning of the song. The judgment comes when the "sinner man" realises too late that his contempt for the lord has left him pitted against the lord and without having taken up his offer for forgiveness. God condemns him with the devil (another one of his creatures who turned to evil rather than choosing to relate with him) and asks him why he didn't want to talk earlier. The song addresses those listening with the line "sinnerman you oughta be prayin", ie talk to and trust God's offer for forgiveness now and spare yourself the danger. The cry "Power! Bring down Power!" is a request for God to bring down his protective power on those who trust in him and save them when he destroys the world I suspect. Perhaps this is why the song’s composer chose to express their need for the Lord's power at the end of the song.
Other websites say that Nina learnt the song from her mother.

I sang this song for choir and I loved it. The third verse was diffrent, but it was like this:

It really is a beautiful song. Makes me all teary-eyed just remembering it.
I first heard this song when I was thirteen years old. She seems to be singing directly to me. She spoiled me. I have spent my life looking for a woman who would treat me that way. Of course I never did and now at sixty one back to Nina, closing my eyes listening to her strong poweful voice and that piano imaging that she is sing to me. She is the best. I love her still

I think the meaning is pretty obvious, even though I'm not into any religion.
I believe it is about a sinner who at a point realizes the evil he's done. At such point, a sinner has no way to undo his actions and cannot bear it anymore. He tries to hide, but there's no way he can't hide what he's done. He asks god for forgiveness, but it is not so easy. Wherever he goes, he feels the great weight of his sins. Finally god takes him and asks him why he sinned instead of praying...
Does this make sense or did I get it all wrong?
No matter how right or wrong I may be, the song is just great and it was the song that introduced me to Nina Simone. Great musician, this lady!

My Baby Just Cares for Me is one of the all time great songs, it is still great to listen to after all the years. The lyrics are simple and easy to learn but it is the timing of Ninas performance which is so terrific.
